The short answer is the rock beneath it. Most of the area sits on limestone laid down on an ancient sea floor, which shows in its caves, sinkholes and coastal cliffs, and in the famous terra rossa of Coonawarra.

For vines, the limestone means free draining soils and, in many places, a reliable supply of underground water, two reasons the zone grows such fresh, well balanced fruit.
