Assyrtiko is the star, grown above all on the volcanic island of Santorini. Bone dry and racy, with lemon, green apple and a striking salty minerality, it is one of the world's truly great white grapes.

Malagousia is softer and more aromatic, all peach, jasmine and gentle spice, a lovely contrast to zesty Assyrtiko. Moschofilero from the Peloponnese adds floral, rose scented charm.
