Pale gold in colour with a delicate bead and fine mousse. Intense aromas of oyster shell, lemon curd, toast and honeysuckle overlaid with more subtle notes of sweet brioche and roasted hazelnuts. This is a powerful and elegantly structured wine with Chardonnay as the driving force and Pinot Noir providing texture and finesse. Seven years ageing on yeast lees in bottle has built further complexity with layers of brioche, fresh pastry, toast and preserved lemon flavours, complemented by refreshing natural acidity and a savoury finish. This is a sparkling wine of finesse, power and elegance.
