Tasting Notes: Racked directly to barrel after whole-bunch pressing, this wine is the purest expression of TarraWarra Chardonnay. Made without yeast or acid addition, each parcel of fruit is kept entirely separate in barrel over the 10 months in oak. The wine is blended just prior to stabilization and bottling. Notes of oyster shell, roasted nuts and lemon citrus. It strikes a perfect balance between fruity generosity, crispness, and acidity. Minimal oak presence allows pear, citrus, grilled hazelnuts and a hint of sea spray.

Serving Temperature: 10–12°C – best served chilled but not overly cold, allowing the Chardonnay’s citrus, stone fruit, nutty and subtle oak characters to shine.

Decanting: Optional – not essential, but allowing the wine to breathe for 15–30 minutes in a decanter or glass can enhance its complexity, texture and oak integration.

Cellaring Potential: Enjoy now through to approximately 2030+ with careful cellaring. The cool 2021 vintage, natural acidity and oak maturation provide good ageing potential.

Food Pairing: Pairs beautifully with grilled seafood, roasted chicken, pork, creamy pasta dishes, scallops, salmon, lobster, mushroom dishes, soft cheeses and dishes featuring nuts or cream-based sauces.
