Originally established in 1862 by winemaking pioneer Hubert de Castella, St Huberts has played a long and distinguished role in developing the Yarra Valley's reputation. Drink now to enjoy vibrant varietal flavours, or allow depth and complexity to grow over the next three to five years or so.
The wine is lively, citrus dominant and tightly wound. Lemon tart and pineapple flow through. Some flesh in the mid palate adds evenness and balance. Restrained, elegant and detailed, this wine will gain complexity with age.
Colour:
Pale straw with green highlights
Aroma:
Lifted notes of white peach, nectarine, and citrus blossom, underpinned by subtle vanilla, almond meal, and flinty oak
Palate:
Medium-bodied with layers of stone fruit and citrus, interwoven with fine oak spice and a refreshing acid backbone; a creamy texture lends depth to the finish
Cellaring:
Drink now while fresh and vibrant, or cellar for 3–4 years to develop added complexity
