Tasting Notes: Deep garnet colour. Intensely aromatic with black fruit characters and notes of flint. An elegant wine displaying flavours of dark cherry and crushed thyme combined with savoury notes. The palate is full bodied with silky tannin and toasted oak on the lingering finish.

Serving Temperature: 14–16°C to highlight the wine's elegant fruit, aromatics and silky texture.

Decanting: Recommended for 20–30 minutes. Although approachable upon opening, a short decant allows the dark fruit, savoury notes and subtle oak to become more expressive.

Cellaring Potential: Drink now or cellar for 8–10 years or longer under ideal conditions. The wine will develop additional complexity with age.

Food Pairing: Herb-crusted rack of lamb with green bean and olive salad (the winery's recommendation), roast duck, venison, mushroom risotto, grilled salmon, roasted game birds, or aged hard cheeses.
