Tasting Notes: The nose has aromas of cedar, spice and strawberry. The palate is long with notes of strawberry alongside spicy tannin structure from the stalk ferment and barrel aging. Acidity on the palate is well structured, a crisp finish from 100% natural acid.

Serving Temperature: 14–16°C. Serving slightly below room temperature highlights the wine's vibrant red fruit, freshness and fine tannin structure.

Decanting: 30–45 minutes recommended.

Cellaring Potential: Drink now or cellar for 5–8 years (to around 2031).

Food Pairing: Duck breast, roast quail, grilled salmon, herb-crusted pork, mushroom risotto, roast chicken, charcuterie, or baked brie. Its bright acidity also pairs beautifully with dishes featuring earthy mushrooms or truffle.
