Tasting Notes: Crafted in the distinctive Redbank style, it's fruit forward, dry, crisp and teeming with complexity. The nose shows aromas of orange blossom, sherbet and citrus with a subtle note of strawberry. The palate shows clean and fresh natural acidity with notes of white stone fruit and lemon zest. As this wine ages it is developing its complexity with nougat and brioche notes appearing all while still having that classic Redbank backbone of natural acidity.

Serving Temperature: 6–8°C, well chilled. This temperature preserves the fine mousse while allowing the citrus, stone fruit and brioche characters to shine.

Decanting: Not recommended.

Cellaring Potential: Drink now.

Food Pairing: Fresh oysters, prawns, scallops, smoked salmon, sushi and sashimi, grilled white fish, roast chicken, creamy mushroom risotto, triple-cream brie, or canapés. Its crisp acidity also makes it an excellent aperitif.
