Pours with a frothy white mousse that shows very good hold. Pale straw base wine colour with a very fine bead that shows excellent persistence. Rich, powerful nose with aromas of baked bread, yeast lees and some toastiness to the fore. Subtle roasted almond and citrusy dried honey notes follow on. Quite full and rich the palate possesses mouth filling flavours of baked bread, oily toast like characters and yeast lees with infusions of roasted nuts and traces of citrus fruits freshening things up. Creamy textural feel with a dry oily finish. Superb richness and length with a long toasty aftertaste of bready yeast lees characters and roasted nuts. Drink over the next 3-4 years.

This Pierre Gimonet & Fils Champagne will pair well with Mild and creamy cheeses, including Brie, triple cream and Monterey Jack. Pasta with pesto or cheese-based sauces. Pasta with buttery or brown butter sauces. White fish and shellfish. Chicken or fish in creamy or butter-based sauces. Vegetable dishes with bright, fresh flavours.
