Pale gold with a delicate bead and fine mousse. Aromas of citrus zest, oyster shell and sea spray are overlaid with complex notes of sweet brioche, toast and hazelnut nougat. The palate is elegantly structured with flavours of citrus curd and subtle notes of strawberries and cream. Over three years ageing on yeast lees in bottle has built further complexity and subtle nuances of baked lemon tart, nougat and roasted hazelnuts. With a refreshing natural acidity on the finish, Jansz Tasmania Vintage Cuvée 2021 is a sparkling wine of elegance and finesse

Crumbed Blue-eye trevalla with a squeeze of lemon and hot chips; or roasted eggplant, zucchini and garlic, with fresh thyme and tarragon white wine linguini.
