A full luscious bead that fills the mouth with no harsh acid edges or overt sweetness. Beautifully balanced citrus notes and yeastiness. Youthful but complex on the palate with texture, freshness and a long clean finish.

A great classic sparkling wine is always a delight to pair with some seriously luxurious dishes and ingredients. The obvious choices are lobster, crab, and rich shellfish like scallops and oysters - extra points if cooked in a buttery and creamy sauce, or stirred into silky linguine. However, this wine is also going to work very nicely with Asian cuisine, especially Thai broths and coconut milk-based curries, and with less spicy Indian curries too.
