Coldstream Hills has been making sparkling wine, albeit in small quantities, since 1995. The first release of the wine was a Blanc de Noir, but in more recent times, it has been a more traditional blend of Pinot Noir and Chardonnay. The south facing slopes of the Deer Farm Vineyard at Gladysdale provide an ideal source for Pinot Noir and Chardonnay grapes. The fruit was hand-picked and gently pressed prior to fermentation. Following secondary fermentation, the wine spent close to three years on yeast lees prior to disgorging and release.

Attractive toasty, bready aromas with underlying lemon fruit characters entice the nose. A fine style of sparkling wine, youthful lemon characters with mid palate texture from the pinot noir. The finish is crisp & balanced, with fine acidity.

Citrus zest, white flowers and subtle stone fruits layered with brioche, almond and toasty autolytic notes

Palate
Bright and crisp with citrus, green apple and white peach flavours, supported by a creamy mousse and balanced acidity. A touch of nutty complexity leads to a long, dry finish

Drinking well now, but can be cellared through 2026 for further development
