This Pinot noir was fermented in small 1 tonne batches with twice daily plunging of the ”cap” formed by the grape skins. Maturation for 10 months in new and second fill French oak on yeast lees has introduced a creamy mid palate texture. In an effort to preserve the subtle complexities, this Pinot has been bottled unfined and unfiltered. A clear crimson with youthful purple hues. Bright red fruits combine with hints of darker plums and cherry with an earthy, gamey mid palate with hints of mushroom and a spicy finish of soft tannins. A vibrant lifted nose of black cherry and strawberry complemented by spicy vanillin French oak. This wine will improve with up to 10 years careful cellaring.

This wine pairs well with meaty and oily fish.
