Only on exceptional years when the Hunter Valley has warm and dry summer conditions will we attempt to make our iconic and most awarded wine. ‘The Ghillie’ is a Gaelic term for a special group of people in the Highlands of Scotland who hold responsibility for fly fishing, hunting and leisure pursuits in the lochs, rivers and mountains. This medium to full bodied 100% Hunter Valley Shiraz is produced from mature vines in the Pokolbin region and hand made at our Capercaillie winery. Hand-picked on the last days of January and matured in 30% new and 70% seasoned French oak hogsheads for 16 months. A very complex nose with flavours of roasted cashews, dark chocolate, black pepper corns, blackberry, blood plum, toffee apple and field strawberries. A deliciously long palate full of juicy acidity and powerful tannins yet all so delicate. Enjoy now or carefully cellar for the next decade.
