Cabernet and Sangiovese have traditionally been blended together in Italy for over 40 years with great success. Although the tannins of each variety are similar, the rusticity and charm that Sangiovese gives to the blend is quite special.
Three distinct fermentation styles with the components. Whole bunch Cabernet Sauvignon fermented in open pots. Traditional stemmed and crushed Cabernet with frequent pump overs and a 20 day maceration. Sangiovese with 10% whole bunch, lots of foot plunging, 15 days on skins.
